Instructions

  • Step 1
    Prepare the Batter
    In a bowl, mix besan, turmeric, salt, sugar, ginger-green chili paste, lemon juice, and water to form a smooth batter.
  • Step 2
    Add the Rising Agent
    Just before steaming, add fruit salt (Eno) to the batter and mix gently until it becomes frothy.
  • Step 3
    Steam the Dhokla
    Pour the batter into a greased steaming plate and steam for 15-20 minutes until a toothpick inserted comes out clean.
  • Step 4
    Prepare the Tempering
    Heat oil in a pan. Add mustard seeds, sesame seeds, curry leaves, and green chilies. Sauté for a few seconds.
  • Step 5
    Garnish and Serve
    Pour the tempering over the dhokla. Garnish with chopped coriander and serve with green chutney.

  • Use Fresh Eno: Always use fresh fruit salt for the best spongy texture.
