Instructions

  • Step 1
    Prepare the Okra
    Wash the okra thoroughly, pat dry with a cloth, and chop into ½-inch pieces. Ensure they are completely dry to avoid stickiness.
  • Step 2
    Fry the Okra
    Heat 1 tbsp oil in a pan, add the chopped okra, and stir-fry on medium heat for 8-10 minutes until slightly crisp. Remove and set aside.
  • Step 3
    Sauté Aromatics
    In the same pan, add remaining oil, cumin seeds, and chopped onions. Sauté until onions turn golden brown. Add ginger-garlic paste and cook for 1 minute.
  • Step 4
    Add Spices and Tomatoes
    Stir in turmeric, red chili powder, coriander powder, and salt. Add chopped tomatoes and cook until the mixture becomes soft and oil separates.

    Combine Okra and Spices
    Add the fried okra back to the pan, mix well, and cook for 5-7 minutes on low heat. Sprinkle garam masala and amchur powder, stirring gently.
